   Pictures don’t do you justice, but I think you’re beautiful. You’re many-layered and endlessly fascinating. And also an excitingly crunchy source of dietary fibre.
   You need to love yourself more and stop hiding your green, leafy light under a bushel.
   Most people take you for granted – but the salad industry would be lost without you, and so would I.
